Type of soil: Clay hillside on limestone base.
Grape varieties: White: 95% Sauvignon Blanc and 5% Sauvignon Gris. 10% Sémillon in the second wine from 2013.
Vinification:
Slow pneumatic cold pressing (inerted), pellicular maceration on certain batches, reasoned settling, alcoholic fermentation in barrels, tuns and vats.
Ageing: 9 months in tuns and vats on the lees with batonnage.
Tasting:
The second white wines of Couhins have many attributes of their elder, in particular the omnipresent fruity character of citrus fruits as well as a fresh and tense mouth allowing wonderful agreements from the first years with seafood.
